Lentil Soup with Lemon


  • 2 cups lentils
  • 8 cups water
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery rib, chopped
  • 1 red or green sweet pepper
  • 2-4 Tbs olive oil
  • 2 bay leaves
  • 1 Tbs salt
  • 2 Tbs vinegar
  • juice of one lemon


  • Sort and wash lentils, drain.
  • Put lentils, water, vegetables, oil, bay leaves and salt in a large pot and simmer, covered, until the lentils are tender, about half to one hour.
  • Add vinegar and lemon, and if you like, some more vegetables, just before serving.
  • Serves 4-6.
