How to make Shavuot/Hanukkah Hungarian Cheese Latkes

(They're great at Passover too -- just use matzoh meal instead of flour and check the oil.)

Ingredients
(for 10 pancakes -- can be multiplied):

  • 2 eggs
  • 1 cup (or less) sugar
  • 8 ounces cream cheese
  • 6 Tbs large curd cottage cheese
  • 3/4 to 1 c. flour (matzoh flour for Pesach)
  • 1/2 tsp. salt

Directions

  • Mix eggs and sugar in food processor. Add cheeses, 3/4 c. flour, and salt. Mix until smooth.
  • Drop 3 Tbs batter onto heated, buttered frying pan and cook until browned on each side. If batter is too loose, add additional flour.
  • Top with whipped cream, jam, maple syrup or cinnamon.
