Cardamom Carrot Tsimmis
1 lb carrots, sliced thin
1 orange, squeezed, with pulp
1 1/2 Tbs butter
1/2 tsp cardamom (preferably from whole seeds, peeled and crushed)
Saute carrots in butter with cardamom for 15 minutes.
Add orange juice and pulp.
Continue sauteing until tender.
