Ruth's Matzah Kugel

Ingredients (one tray -- serves 4-5 at most; make 2!)
  • 6 pieces matza
  • 4 eggs
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 Tbs melted butter
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 cup chopped apples
  • 1/2 cup raisins (or an additional 1/4 cup sugar)
Directions
  • preheat oven to 325 degrees.
  • Break matzahs into a large bowl or tray.
    • Pour boiling water over them.
    • Drain.
    • Pour cold water over them.
    • Drain.
  • Mix all ingredients together.
  • Assemble in buttered tray.
  • Bake at 325 degrees 1/2 - 1 hour (until bubbly and crispy on top).
  • Sprinkle cinnamon and sugar on top before serving.
